Congratulations - you seem to have found your way round and you have done all the right things.
The difference isn't due to Vista - it is Word 2007. So many people have complained about the lack of menus that Microsoft have created an addon which replaces the menus - but don't bother, because you seem to have found your way round OK.
As you found, in Word 2007 it is easy to assign a keystroke when you are creating or recording a macro, but I'm not sure how to do it afterwards. What you can do is
- open the menu "record macro" and call it ESV2 (or anything you like),
- assign it to a letter (such as ctrl Q)
- record something (eg just type a letter) and stop the recording.
- edit that macro by deleting the line(s) you have recorded and pasting in the lines from the ESV macro.
The proposed changes I made to Ps.27.8 have turned blue! - ugg, this must have happened while I was formatting things. My new proposal is supposed to be in Green with your's in Red. Please delete the Red ones if you approve, or delete the Green if you don't. I don't think we want both.

Hi, David,
Vista isn't designed the same as your instructions--which look easy to follow.
First of all, the macro came written out instead of as an attachment. Then Word doesn't have a Tools to go to; at least not that I can find.
Soooo .... I highlighted it, copied it, opened Word and in View, found the option for Macros, which gave the choice View Macros, and that had the option to name and create ESV. This then opened a window called Microsoft Visual Basic--Normal, which had within it a window that had your NNote macro already recorded. I pasted the new ESV macro in below the line under the new subject: sub ESV ( ). It is now in a window called "Normal -- NewMacros (Code)" I saved "Normal" at the top of the window under "File", hoping that makes the Macro permanent. Who knows what I just did.
Very well. No Tools to set the keystroke up.
So back to the Macros option under View. There is an option in that menu called "record macro". That opens a box that says macro 2, or I could type in ESV. If I typed in ESV, then clicked on the keyboard icon, it asked if I wanted to replace the existing macro. If I didn't say yes, it closed the entire box. If I said yes, it opened a box that had a line for the keystroke signal but deleted the macro ESV. So if I left macro 2 on the title line, I could click on the keyboard icon, opening the same box where I could record the keystroke, then I had the option of clicking "Assign" and "Close"--which closed everything. I opened Macro again and clicked on "stop recording". Checking the NewMacro (Code) box, there is a new macro, "macro 2" under ESV in the Normal NewMacros(Code) window.
Nothing happens when I do control Q on a document, so it isn't working yet: So I'll keep playing with it to see if I can work it out; I if you have any suggestions they will be most welcome.
By the way, your changes in Ps. 20:8 are fine with me--thanks. Everything is blue in 27:8. I see, however, that it has been changed so as to modify words and then the entire phrase. No objections.
